西 班 牙 巴 耶 雅 Paella

[size=4]Sample Text[/size][font=細明體]Sample Text[/font]這 是 一 道 雜 燴 飯 ， 外 國 人 的 印 象 多 是 以 海 鮮 為 主 ， 但 西 班 牙 人 也 用 很 多 肉 去 煮 的 。
巴 耶 雅 Paella 英 美 人 有 的 唸 為 巴 耶 拉 ， 其 實 西 班 牙 語 系 中 ， 有 兩 個 L 字 連 在 一 起 的 ， 都 發 音 成 雅 了 。
研 究 來 源 ， 巴 耶 雅 是 指 一 個 平 底 的 鍋 ， 左 右 有 兩 個 手 柄 ， 由 生 鐵 鑄 成 。 在 專 賣 巴 耶 雅 的 店  ， 或 在 西 班 牙 傳 統 廚 房 ， 都 掛  大 大 小 小 ， 各 種 不 同 的 鐵 鍋 ： 兩 位 、 三 、 四 、 到 八 九 十 人 的 份 量 的 ， 常 見 有 兩 人 合 抱 那 麼 大 的 鐵 鍋 。

食 材 最 主 要 的 是 米 了 。 通 常 用 野 米 ， 先 下 牛 油 ， 把 生 米 炒 個 半 生 熟 ， 炒 時 不 斷 加 清 水 ， 考 究 的 廚 師 是 會 加 雞 湯 的 。
清 水 或 雞 湯 中 加 的 是 藏 紅 花 Saffron 。 藏 紅 花 在 巴 耶 雅 中 佔 很 重 要 的 位 置 。 沒 有 了 它 ， 就 煮 不 出 那 種 粉 紅 色 來 ， 有 些 廚 子 藏 紅 花 下 得 很 多 ， 除 了 顏 色 ， 還 能 吃 出 藏 紅 花 的 香 味 。
炒 米 時 可 加 肉 類 ， 雞 肉 最 多 人 用 ， 也 有 加 鴨 子 的 ， 喜 歡 吃 兔 肉 的 人 也 不 少 ， 牛 肉 倒 不 常 見 。 此 道 飯 有 阿 拉 伯 人 的 影 響 ， 故 豬 肉 亦 少 下 ， 最 多 是 幾 片 豬 肉 香 腸 ， 或 血 腸 。
至 於 海 鮮 ， 最 多 的 是 魷 魚 、 八 爪 魚 ， 然 後 各 種 魚 肉 ， 當 地 捕 到 甚 麼 魚 就 用 甚 麼 ， 大 塊 斬 件 ， 不 太 用 小 隻 的 魚 類 。 蝦 和 蟹 也 常 用 ， 很 獨 特 的 是 ， 在 華 倫 西 亞 地 區 ， 用 蝸 牛 下 飯 。
蔬 菜 則 以 洋  和 番 茄 為 主 。
調 味 品 方 面 ， 有 匈 牙 利 辣 椒 粉 Paprika 、 鹽 、 胡 椒 和 橄 欖 油 ， 有 時 也 下 幾 粒 用 鹽 水 泡 過 的 鹹 橄 欖 。
至 於 香 料 ， 新 鮮 的 迷 迭 香 rosemary 是 常 下 的 ， 也 有 人 加 金 不 換 。 乾 的 香 料 則 加 一 點 味 道 很 重 的 孜 然 ， 但 以 海 鮮 為 主 的 就 儘 量 避 免 孜 然 了 。
由 生 米 炒 至 熟 ， 又 要 下 大 量 配 菜 香 料 和 調 味 品 ， 巴 耶 雅 看 來 容 易 ， 但 做 得 好 是 不 易 的 。 當 然 在 家  母 親 下 廚 ， 怎 麼 難 吃 都 說 美 味 ， 到 了 餐 廳 ， 要 吃 一 鍋 好 的 巴 耶 雅 ， 難 矣 。
去 西 班 牙 當 地 著 名 的 海 鮮 館 叫 巴 耶 雅 ， 通 常 有 點 保 證 。 海 外 的 西 班 牙 餐 廳  ， 雖 然 都 有 這 道 菜 ， 但 絕 對 做 得 不 到 家 。 也 許 是 採 用 了 外 國 海 鮮 ， 味 道 總 不 如 在 西 班 牙 吃 的 。 東 方 人 初 嘗 此 菜 ， 也 會 覺 得 米 粒 太 硬 ， 吞 不 下 去 的 。

今年4月去過法國, 入左一間法國餐廳食晚飯, 叫左一客西班牙炒飯, 個waiter話最少要兩人份量, 咁我地每人一個主菜, 再加一個西班牙炒飯一齊食. :P

個waiter先放個鐵架係台上, 當時都知道佢地會係鐵鍋上, 等左大蓋十五分鐘, 離遠見到個waiter雙手拿著個很大的鐵鍋, 上面鋪滿虾, 墨魚, 番茄等等材料....個飯比我們相象中真的大很多. 我地話4-5人份量就差唔多, 唔係個waiter講既2人. :L

個飯好濃既醬汁味, D海鮮好新鮮同埋D汁混入個飯度, 好香...:loveeyes:

係香港冇乜點試過呢個菜式, 唔知邊度有得食呢?? ;P:lol

For authentic Spanish restaurant, you should try OLE at Ice House Street.  It has a really friendly atmosphere and the owner drops by and say hello.  He from time to time join the band to sing.  I also had the honor to sing the Besame Mucho with them.

I didn't try the Paella though as there were only two of us and the minimum order of Paella is for 2 persons, leaving no room for others.

Damage - probably around $900 for 2 including 2 glasses of house wine.

I tried the similar dish at a Spanish restaurant in Germany.  Very delicious!!!

尋日喺"郎豪坊"13樓 Tapas 食過佢地既 Chorizo Paella, 做得唔錯.  其他小食都幾好.  但係最唔待就係個dip.  失敗中既失敗...  blue cheese稀到呢.... guacamole原全冇牛油果味, hummous又係一d chick eye peas既香味都冇.  反而d pita bread烤得唔錯...  (過百蚊食3種咁難食既dip真係... 番中環habibi好過)

你講起我都記得食過呢間野. 印象中個Paella好細個鍋, 1-2個人岩岩好, 多D人都唔夠食~ :P

個飯幾好味, 坐係個環境食飯, 克蚊蚊, 一邊食一邊飲野都幾RELAX...:P

The pan rice is very very delicious!!!  The pawn is with too much butter la...  :boxing::boxing::boxing::boxing::boxing:

I also tried deer meat in Germany.  While you are having your dish, you can see the deers running and playing outside the restaurant.... :):):):)

that sounds wonderful...  where abouts in germany is this?  i need more reasons to push myself for a germany trip, other than to visit ex-girlfriend in goettingen...

It's a place called Bad Homburg closed to Frankfurt.  The restaurant that can taste deer steak named Hirschgarten.  It looks like a restaurant in a country park and you need to rent a car to go there.  :verygood::verygood::verygood:

Beef steak, e.g. sirloin and tenderloin, tastes better.  The texture is not as soft as expected.

it looks good.  i love a good steak(beef), but i also like game meat too...  basically anything other than cat and rat is ok la, as long as it's bred for foodstuff.

厘間我都去過

我就覺得野食都叫OK

但環境就真係幾嘈同�囍�(�^與�^之間)都好逼

El Cid 唔係銅鑼灣有2間嗎?  食街同時代13樓?  (時代13樓有可能唔見咗嚕...果度冇乜店可以活得長...)

I know this restaurant. I like their special drink, but cant remember the name. In pink w/ fresh fruits in a jar! :loveeyes:
I also like their garlic shrimp, small dish w/ slices of fried garlic...yummy! :P

Red wine.
7 Up .........................Cold  7 up.

I remembered i drank something similar in China, GREAT WALL RED WINE + CREAM SODA. But without fruit. Not easily get drunk...but what a waste to the red wine. :L

The amount of alcohol in the Sangria quite depends.  It is very suitable for ladies, but sometime ladies can easily get drunk because it tastes not so alcoholic.
