掌厨時要全盤了解並理解特定菜式的烹煑火候 調味份量 過程原理，所有要求要已在腦中，執行時一切已存乎一心，不能有邊煑邊查察食譜，將步驟指示在旁一項一項對應執行的業餘表現！
[b]2./ 時間和次序 的管理。[/b]
好的厨房揸 fit 人，一定是擅於制訂煑食工序和時間分配，可以輕輕鬆鬆地令各款食物在預定進食時間，恰恰地同時弄好上桌，不會出現熱食冷卻、或上桌不繼、或客人要等待掌厨的主人從廚房出來方可同進食...等不良情况！

灣仔尾船街一帶近期開好多新店....有個新起既service apartment旁邊有間pizza店20號開業, 佢旁邊(大胃王對面)有間睇落開咗冇o耐既法國菜/wine bar(有條室外樓梯上2樓就係佢). 名好似叫 "le Fauchon" (食咗都唔記得個名). d食品味道普通至中上, 四道菜 $208(頭,湯,主,甜)唔算貴, 主要係飲wine既地方. 可以再去. 有個大露台可以食煙. 室內佈置似北加州fusion店feel., 但食既係比較傳統菜式. 主菜個duck leg confit(未解好凍同點會用炸架, 好似食緊臘鴨咁...)唔好叫之外同個洋蔥湯有少少water down其他都ok. 個grand marnier souffle唔算差, 酒香o岩o岩好.
愛酒人士好去處, 反正飲d"所謂紅酒"飲到咁上下乜味都食唔出. ^_^

please write when you are not drunk. it's difficult to figure out how you got from there to here. i'm talking about the numbing of taste buds after a imbibing alcohol(same with tobacco mind you), that makes food seem more palatable. why are you replying about atmosphere?

阿標在香港幫襯 功德林，自昔年摩頓台老店始。 初試時已嫌上海齋菜多油，不過一碟苔條崧子炒飯在當年，又幾少見喎！於是間中有光顧。至某年它遷至維園旁邊後，阿標食了一次已决定不再去！ :(
早日有友人謂此店再遷至國貿摟上，升格了，並相約一眾朋友聚會於此，阿標無不可地再給新店一次機會，哈哈，結果自己揾黎 ... 再三中計了！ :saujai:

:) 當然唔係啦！ 不過，現在煑齋賣齋的，一般都墨守成規，大路得很！有些是賣幾十年傳統不變的普通齋菜式；另一些着重在强調用的原料是有機素食，會令食者健康！相對之下，以追求 美食 為目的 的食齋地方就少得很了！:L
阿標不敢妄自菲薄，但自已每年新春煑的羅漢齋就好多人讚好吃！ 原因是 ..... 嘻嘻，有怪莫怪，阿標其實祇求好食，以史雲生雞湯及蒜子等五辛類入齋，當然，我會對食者先旨聲明，唔會為追求好味效果而打爛別人齋砵！ :P
其實，唔使學阿標咁樣出術，有些真高手煑的齋菜，可以好食到難以想像！:verygood:
阿標多年前食過在寶蓮寺大雄寶殿內閉門貴賓單席由主持款待的精齋，菜式用心，材料矜貴，同行嘉賓食到嘩嘩聲大讚，阿標私下衹打 75 分！:P
:L 講返好食的，阿標曾食過值 95~99 分的齋，不是賣的，地點是在重建前的志蓮的大厨房旁一個小偏廳，當時大厨房休閒，由主持發辦，親入厨房，指指點點，囑咐厨子如何如何、這樣那樣，烹小鮮般 煑了幾個私家齋出來，我們幾個一吃之下，驚為天人，衹懂得口嘴不停，吃到傻子般，跡近失儀！ :$ 主持始知我為食，以後在這些場合更加特意安排，有時阿標更入厨打轉，東問西問，混得頗熟，自此老火齋湯，美味齋菜不缺！ :loveeyes:
:L 唉，不久後志蓮重建 .... 一切俱往矣！ 不過，阿標可以肯定，好吃的齋菜，跟不好吃的，真有雲泥之別！ :afraid:

最近發現左間好"地度"既海鮮菜館，成為左我食中式食店飯堂 !!!!
佢既豉油王花竹蝦，豉汁大聖子，椒鹽鮮魷&白飯魚
仲有"蒸魚" 真係好出色
而且仲成日都有紅瓜子 & 黑瓜子添呀 !!!! goooooood !!!!
上次仲聽到個熟客留左條 "方利" 添0波 !!!!
我覺得價錢都好合理

正如我講，佢真係好地道下既，即係7點後佢既檯會開到舖外，大半條街咁犀利架
要坐舖內，就最好 630前到喇 !!!!

actually i visited there when they were first day open ........ 2003 ?! can't remember lar ........ and then they open TST shop, pizza is very good there !!
