等我細靚太教你地點揀靚象拔蚌啦
要揀一定要揀皮薄餡靚,揸上手肉質有彈性
充血龜頭部份稍微白一d,但蚌身一般成褐色
劣品可能操勞過度,致太黑太粗糙的,一般都唔係太太們首選
唔好以為青筋暴現就係最好
要少青根白裡透紅,為之上品
材料靚既象拔蚌一般會去毛
雞子出現雞皮係好正常現象,用作生食係最鮮味,為太太們喜愛
唔太乾身,處理十零廿分鐘出水就最好
入口即溶,甘香鮮味,令人愛不釋手
