雞粒雜菜薯泥球
(Mashed Potatoes in Chicken & Vegetables Gravy)
材料:
馬鈴薯225克 (去皮,切厚片),雞肉75克 (切丁),雜菜粒1/3杯(包括青豆、玉蜀黍、紅蘿蔔粒)
薯泥調味料:
牛油11/2茶匙,鹽1/4茶匙,糖1/4茶匙,牛奶1湯匙,醬油適量
調味料:
鹽1/4茶匙,高湯2/3杯
醃料:
醬油1茶匙
芡汁:
粟粉1湯匙,水2湯匙
做法:
1. 雞肉洗淨,加入醬油醃10分鐘。
2. 雜菜汆燙1分鐘,撈起用清水沖一沖,瀝乾水份。
3. 馬鈴薯蒸30分鐘,取出趁熱壓成薯泥,加入薯泥調味料攪拌均勻,再蒸一會,挖成球狀,排在碟上。
4. 鑊裡燒熱1湯油,放入雞肉翻炒片刻,放入調味料和雜菜繼續拌煮一會,然後以少許粟粉水勾芡,盛起淋在薯泥上即可食用。
INGREDIENTS
225g potatoes (peeled, cut into thick slices), 75g chicken (diced),
1/3 cup frozen mixed vegetables (including green peas, corn, carrots)
SEASONING FOR MASHED POTATOES
11/2 tsps butter, 1/4 tsp salt, 1/4 tsp sugar, 1 tbsp milk, light soy sauce, as required
SEASONING
1/4 tsp salt, 2/3 cup soup stock
MARINADE
1 tsp light soy sauce
THICKENING
1 tbsp corn starch blended in
2 tbsps water
METHOD
1. Clean the chicken and marinate with light soy sauce. Leave aside for 10 minutes.
2. Blanch the frozen mixed vegetables in boiling water for 1 minute. Scoop up, rinse with water
and then drain off the water.
3. Steam the potatoes for 30 minutes. Remove from steamer, mash the potatoes while still hot.
Add seasoning for mashed potatoes, stir and mix well. Steam further. Scoop into balls, and
arrange on a plate.
4. Heat 1 tbsp of oil in a wok. Stir in the diced chicken, add seasoning and mixed vegetables.
Stir-fry for a while. Thicken gravy with corn starch blended with a little water and stir.
Dish up and pour gravy over the mashed potatoes.
