i also quite like cova, but they're not the same thing as illy, at least not in HK. Cova has restaurants and restaurant style food. Illy AFAIK serves Starbucks/PC style fast food coffee. so, unless you are referring to their beans which you bring home to brew your own cup of coffee, please stop comparing the two as the same thing.
if you are talking about their beans, then i have no idea what you are getting at. If Illy's coffee is roasted in Italy and shipped here, then wouldn't Cova do the same? If it's roasted in Hong Kong, then i question their standards and quality of roasting in Hong Kong.
btw, on a side note, stay away from Cafe Zambra's coffee (Stewart rd. and Jaffe rd. in Wanchai, next to Tom Lee). Quite bad and even more over-roasted than Starbucks.
