I am no Ching, I have few experience to share only lah.....
General thought is, go there late (perhaps 11pm ), mark the girl you prefer, if not available, ask the manager to recommend one, they will feel your need from your original marking la. (my experience tells I will like the girls in night shift more than those in day shift)
Perhaps once or few times, you run into the ladies you don't feel comfortable with. But, just as dicks shape differently on various people, how would one tell for sure you will like the girl he/she recommend? Let your body feel it and find the ONE.
You know, being a familiar customer is always a question of how you communicate with others. So, just ask the right question and don't be shy. There is no reason to be shy.
Sometimes, mind the girl just pass by, and ask what is her name ... ... some books say you only need 3 seconds to tell you like the girl or not.
