Sample TextSample Text這是一道雜燴飯，外國人的印象多是以海鮮為主，但西班牙人也用很多肉去煮的。
巴耶雅 Paella 英美人有的唸為巴耶拉，其實西班牙語系中，有兩個 L 字連在一起的，都發音成雅了。
研究來源，巴耶雅是指一個平底的鍋，左右有兩個手柄，由生鐵鑄成。在專賣巴耶雅的店  ，或在西班牙傳統廚房，都掛  大大小小，各種不同的鐵鍋：兩位、三、四、到八九十人的份量的，常見有兩人合抱那麼大的鐵鍋。

食材最主要的是米了。通常用野米，先下牛油，把生米炒個半生熟，炒時不斷加清水，考究的廚師是會加雞湯的。
清水或雞湯中加的是藏紅花 Saffron 。藏紅花在巴耶雅中佔很重要的位置。沒有了它，就煮不出那種粉紅色來，有些廚子藏紅花下得很多，除了顏色，還能吃出藏紅花的香味。
炒米時可加肉類，雞肉最多人用，也有加鴨子的，喜歡吃兔肉的人也不少，牛肉倒不常見。此道飯有阿拉伯人的影響，故豬肉亦少下，最多是幾片豬肉香腸，或血腸。
至於海鮮，最多的是魷魚、八爪魚，然後各種魚肉，當地捕到甚麼魚就用甚麼，大塊斬件，不太用小隻的魚類。蝦和蟹也常用，很獨特的是，在華倫西亞地區，用蝸牛下飯。
蔬菜則以洋  和番茄為主。
調味品方面，有匈牙利辣椒粉 Paprika 、鹽、胡椒和橄欖油，有時也下幾粒用鹽水泡過的鹹橄欖。
至於香料，新鮮的迷迭香 rosemary 是常下的，也有人加金不換。乾的香料則加一點味道很重的孜然，但以海鮮為主的就儘量避免孜然了。
由生米炒至熟，又要下大量配菜香料和調味品，巴耶雅看來容易，但做得好是不易的。當然在家  母親下廚，怎麼難吃都說美味，到了餐廳，要吃一鍋好的巴耶雅，難矣。
去西班牙當地著名的海鮮館叫巴耶雅，通常有點保證。海外的西班牙餐廳  ，雖然都有這道菜，但絕對做得不到家。也許是採用了外國海鮮，味道總不如在西班牙吃的。東方人初嘗此菜，也會覺得米粒太硬，吞不下去的。

今年4月去過法國, 入左一間法國餐廳食晚飯, 叫左一客西班牙炒飯, 個waiter話最少要兩人份量, 咁我地每人一個主菜, 再加一個西班牙炒飯一齊食.

個waiter先放個鐵架係台上, 當時都知道佢地會係鐵鍋上, 等左大蓋十五分鐘, 離遠見到個waiter雙手拿著個很大的鐵鍋, 上面鋪滿虾, 墨魚, 番茄等等材料....個飯比我們相象中真的大很多. 我地話4-5人份量就差唔多, 唔係個waiter講既2人.

個飯好濃既醬汁味, D海鮮好新鮮同埋D汁混入個飯度, 好香...

係香港冇乜點試過呢個菜式, 唔知邊度有得食呢??

For authentic Spanish restaurant, you should try OLE at Ice House Street. It has a really friendly atmosphere and the owner drops by and say hello. He from time to time join the band to sing. I also had the honor to sing the Besame Mucho with them.

I didn't try the Paella though as there were only two of us and the minimum order of Paella is for 2 persons, leaving no room for others.

Damage - probably around $900 for 2 including 2 glasses of house wine.

尋日喺"郎豪坊"13樓 Tapas 食過佢地既 Chorizo Paella, 做得唔錯. 其他小食都幾好. 但係最唔待就係個dip. 失敗中既失敗... blue cheese稀到呢.... guacamole原全冇牛油果味, hummous又係一d chick eye peas既香味都冇. 反而d pita bread烤得唔錯... (過百蚊食3種咁難食既dip真係... 番中環habibi好過)

你講起我都記得食過呢間野. 印象中個Paella好細個鍋, 1-2個人岩岩好, 多D人都唔夠食~

個飯幾好味, 坐係個環境食飯, 克蚊蚊, 一邊食一邊飲野都幾RELAX...

The pan rice is very very delicious!!! The pawn is with too much butter la...

I also tried deer meat in Germany. While you are having your dish, you can see the deers running and playing outside the restaurant....

that sounds wonderful... where abouts in germany is this? i need more reasons to push myself for a germany trip, other than to visit ex-girlfriend in goettingen...

It's a place called Bad Homburg closed to Frankfurt. The restaurant that can taste deer steak named Hirschgarten. It looks like a restaurant in a country park and you need to rent a car to go there.

I not dare eat deer or rabbit. Especially when you see them alive outside, but you eat them inside. Oh...no!

Beef steak, e.g. sirloin and tenderloin, tastes better. The texture is not as soft as expected.

it looks good. i love a good steak(beef), but i also like game meat too... basically anything other than cat and rat is ok la, as long as it's bred for foodstuff.

There is one in Central, I forgot the name , and ithey are only so so .

厘間我都去過

我就覺得野食都叫OK

但環境就真係幾嘈同啲位(枱與枱之間)都好逼

I know this restaurant. I like their special drink, but cant remember the name. In pink w/ fresh fruits in a jar!

I also like their garlic shrimp, small dish w/ slices of fried garlic...yummy!

Stanley one is closed? What restaurant is it now?
I haven't been there for a long time...

I honestly don't know if they open for lunch. I'll check if I can find their business card.

Red wine.
7 Up .........................Cold 7 up.
Fruit : Strawberry, lemon ,orange green apple . etc

Sometimes , very relaxing when you have them in a peaceful garden,under a tree. ..... 0r .......... barbecue with some friends .

Yes, that is the drink i refer to!

I remembered i drank something similar in China, GREAT WALL RED WINE + CREAM SODA. But without fruit. Not easily get drunk...but what a waste to the red wine.

The Sangria is very tasty and easily mixed. The arrow pointed is the drink la.

The amount of alcohol in the Sangria quite depends. It is very suitable for ladies, but sometime ladies can easily get drunk because it tastes not so alcoholic.

Right, I can drink a lot even the wine is mixed into it.
