First, may I ask how old you are? If you are in between the age of 20 to 25, then I will tell you to stay in England and work in that hotel. Since these kind of chances does no come often. Also, remember, once you are doing a good job over there, you might have a chance to get transfer to those bigger and nicer hotels. Not that I am telling you not to go back to HK, but if you have this kind of chances, do your best and get the experience. On top, you will not get that type of money when you are just starting in HK.
But if you are over the age of 25, then I will suggest you to head back soon, since age is a very important in the hiring process in HK. Theolder you are, the less chance you will have. Trust me...I know!!!
No matter what, for you to get more over seas experience is a huge asset for you, no matter what your age is, if you can afford to spend another year in or 2 England, I will suggest you to. Also take some language course as well. Remember, the more language you speak, the better you will be once you are back in HK. You will have more bargining power as well.
Also, the Hotel business in HK is just steady right now. If you really want to make yoru career in the hospitality business, you should be aiming at China!!
