THICKENING
1 tbsp corn starch blended in
2 tbsps water
METHOD
1. Clean the chicken and marinate with light soy sauce. Leave aside for 10 minutes.
2. Blanch the frozen mixed vegetables in boiling water for 1 minute. Scoop up, rinse with water
and then drain off the water.
3. Steam the potatoes for 30 minutes. Remove from steamer, mash the potatoes while still hot.
Add seasoning for mashed potatoes, stir and mix well. Steam further. Scoop into balls, and
arrange on a plate.
4. Heat 1 tbsp of oil in a wok. Stir in the diced chicken, add seasoning and mixed vegetables.
Stir-fry for a while. Thicken gravy with corn starch blended with a little water and stir.
Dish up and pour gravy over the mashed potatoes.
