Been there when it was in Chai Wan, maybe around 6-7 years ago. It felt quite good at the time but somehow never went back. Looking at it from the restauranteur's point of view, it's difficult to knowhow to attract regular customers. there is so much competition.
This menu looks quite heavy, perhaps lighter appetizers may make if more balanced. Or I am getting old too.

I enjoy to discover the culinary world around me, it is so true that hard to keep me as a loyal customer.
In my opinion, I think there are 2 main factors to attract new customers and to keep loyal customers: Publication & Reputation.
The quality of cuisine makes good reputation, then the reputation becomes publication.
The most difficulty is how to maintain the quality, the quality comprises many elements, they are good food, good services, good ambiance & environment, good management.
I am not talking about the good price here, 'cause some of the customers don't mind to pay higher price for higher quality, the reasonable price should be set for meeting the different levels & targets.

Within the catering industry, all should have customer care as the principal focus..
This can be seen as 'the name of the game' in the trade as without customers and a good reputation for quality and service, you will never keep the business up and make money.  
Long hours and stressful situations are rife in the industry and this is for sure, catering jobs are not for the fainthearted.
